Kirby cravings

Chocolate granola cookies  (recipe below)

Kirby is my family name and Kirbie is a blogger. Jennifer (aka Kirbie) has cravings like me and so her blog is aptly entitled Kirbie´s cravings. It chronicles the food cravings of Kirbie and her supportive husband, Mr. K. I blog under the name of O cozinheiro and I chronicle my own food cravings supported by my husband, the thespian.

I stumbled upon her blog by accident. One of her posts popped up on my phone feed a while back and I have been meaning to make the recipe ever since. Since then more of her recipes have been popping up for an assortment of no bake cookies.
Kirbie´s eating philosophy is  all about balance. She shares a lot of healthy meals (with an emphasis on low carb) She is quite keto biased which I am not: I love my carbs too much.
These easy no bake cookies have just three ingredients and are healthier than traditional no bake cookies. Everything is mixed in one bowl for minimal washing-up. The cookies make a delicious snack that will also satisfy your craving for something sweet.
Traditional no bake cookies require butter, milk and sugar. But these ingredients are not needed for Kirbie´s  simplified recipes.
 Inspired by her no cook few ingredients concept I applied it to some Chocolate granola cookies, referenced from (left)  my mum´s classic
chocolate cornflake crispies. It increased the ingredient list to 5 and made them unvegan friendly, but hey ho its winter and given the situation we find ourselves in, it calls for a bit of self indulgence.
Chocolate granola cookies

50g butter
4 tbsp maple syrup
100g cocoa powder
11/2 cups oatmeal
75g granola
 

Gently melt the butter,syrup and cocoa powder in a small heavy pan.stir in the granola.place spoonfuls of the mixture on a greased baking
sheet and leave to set in the refrigerator.
One recipe leads to another and only yesterday my phone was flashing yet another Kirbie recipe with not three but just two ingredients.Almond flour and over ripe banana,Banana bread in the form of a cookie.The worlds biggest banana bread fiend thought Yum but alas sorry Kirbie but I dont think these worked so well, I enjoyed them but not as much as the chocolate ones,so I am not going to share them.But there are two more 3 ingredient recipes I have tried,These no bake cookies are sweet, chewy, chocolatey and nutty. There are only three ingredients and they don’t contain any flour, eggs, butter or refined sugar. They take only a few minutes to make and store well. They are great,so here they are guys...

3 Ingredient Healthy No Bake Cookies

1/2 cup creamy natural almond butter unsweetened and unsalted
2 tbsp unsweetened cocoa powder dutch process or natural
2 tbsp maple syrup
coarse sea salt optional

Line a baking sheet with parchment paper.
Add almonds to food processor and pulse until nuts are very small, about the size of large crumbs. Add 2 tbsp cocoa powder. Pulse until mixture is fully blended and the mixture becomes sticky and clumpy. If your mixture appears to be too dry and doesn't stick together, add 1 tbsp of water and pulse again. Taste and adjust as needed. If you want a stronger chocolate flavour, add 1 more tbsp cocoa powder. If you want something sweeter, you can add more syrup.
Using a 1.5 tbsp cookie scoop, scoop cookie dough and release onto prepared cookie sheet. Roll each dough ball between your palms to compact it further. Place cookie balls back onto sheet, spaced about 2 inches apart. Press down on balls to form round disks/cookie shape. If you find your dough is too sticky, place cookie balls into fridge for about 30 minutes or until dough becomes a little firmer and less sticky. If desired, you can drizzle melted chocolate over cookies. Let chocolate set before storing cookies.
Store cookies in an airtight container at either room temperature or in the fridge.

3 Ingredient Healthy No Bake date and almond Cookies

1/2 cup almonds
1 cup dates
2-3 tbsp cocoa powder

Line a baking sheet with parchment paper.
